Mango Avocado Black Bean Salad

Ingredients:

4 Tbsp Lime Vinaigrette
1-15 oz can Black Beans, drained and rinsed
1 cup chopped Red Onion
1 ½ cups cooked Quinoa
2 ripe Avocados, peeled and cubed
4 cups Spinach
2 ripe Mangos, peeled and cubed

Directions:

Be sure to keep ingredients separate while preparing.
Make the simple lime vinaigrette by combining 2 Tbsp olive oil, 1 Tbsp of lime juice, and 1 Tbsp of apple cider vinegar, and stirring vigorously. Equally distribute the prepared ingredients into 6 mason jars. To ensure the freshest salad, add the ingredients in the following sequence: lime vinaigrette, chopped red onion, avocado, mango, black beans, quinoa, and spinach last. When ready to eat, gently shake the Mason jar, pour out into a salad bowl, and enjoy!
